Marinade for Scallop Skewers

- 1/4 c. bourbon
- 1/4 c. chopped scallions
- 2 tbsp. maple syrup
- 1 tbsp. soy sauce
- 2 tsp. Dijon mustard
- 1/4 tsp. ground pepper
- 1 lb. sea scallops
- 1/4 lb. slices bacon - 3 in.
- In a bowl, combine the bourbon, scallions, maple syrup, soy sauce, mustard, and pepper. Stir in the scallops. Cover and refrigerate for 1 hour.
- Prepare the grill or heat the broiler. Wrap the scallops in bacon and thread on skewers. Grill or broil 4 inches from the heat, turning once, until the bacon is crisp and the scallops are opaque, about 5 minutes.
