Berglund:Pumpkin Cookies

Ingredients

  • 2 cups sugar
  • 2 cups shortening
  • 17 oz can pumpkin
  • 2 eggs
  • 2 tsp vanilla
  • 4 cups flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp allspice
  • 2 cups raisins
  • 1 cup chopped nuts

Procedure

Cream sugar and shortening. Add pumpkin, eggs, vanilla; beat well. Sift together dry ingredients and add to wet mix. Stir in raisins and nuts. Drops onto greased cookie sheet. Bake at 350°F for 12-15 minutes. Makes ~6 dozen.
