Ingredients

Dressing

  • 1/2 cup Red wine vinegar
  • 1 envelope Italian dressing
  • 2 Tbsp Parmesan or or feta cheese
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tsp sugar
  • 1 Tbsp dried parsley
  • 1 tsp dried basil
  • 3/4 cup olive oil

Salad

  • 18 oz cheese tortellini (cooked as per package directions)
  • 1 cup grated carrots
  • 1 cup chopped celery
  • 2 oz chopped ripe olives
  • 1 cup thinly sliced red onion
  • 1 cup chopped tomatoes
  • 1 cup chopped fresh spinach
    • Veggies can be included or excluded as desired

Procedure

Combine all ingredients for the dressing in blender, and blend to combine. Toss with salad ingredients. Serve immediately.

Comments

  • Dress salad right before serving as spinach tends to wilt rapidly.
