Experimental Biology Laboratory (UC Irvine BIO 100LW)
Fundamentals of GIS for Environmental Sciences (UC Irvine ESS 134)
Tony Soeller teaches this GIS course for undergraduates each year at UC Irvine. During my two quarters as a TA, I helped students apply GIS to questions related to Earth System Science.
The class had an opportunity to map the grass health, soil temperature, and moisture at Aldrich park. Here is one of the reports: Aldrich park lawn conditions.
Some of the student projects were quite interesting and well done. For example, one student applied ArcGIS
to calculate the effects of the southern california wildfires on CO2 release from these ecosystems. You can download their report here:

COSMOS Global Change Biology Summer
